Cauliflower Cottage Pie

 
This recipe is a new take on the traditional cottage pie. I think it’s tastier. Instead of potatoes you use cauliflower as the topping, which adds a new and interesting twist to a familiar dish.
This recipe serves 4.
500g mince.
2 onions, chopped.
4 garlic cloves.
2 teaspoons of worcester sauce.

Roasted Red Peppers.

 
Serves 4. 
Ingredients. 
2 red peppers. 
4 cloves of garlic, sliced. 
4 tablespoons of olive oil. 
2 tomatoes. 
4 tablespoons of Willow Creek Tapenade with Anchovies and Capers. 
1 small brown onion, chopped finely. 
Slice the peppers in half and get rid of cores and seeds. Wash and place on baking tray.

5 Minute Corn Soup.

 
Believe it or not, that’s all it takes.  
This recipe serves 4.  
Ingredients.  
1kg bag of frozen corn.  
1 vegetable stock cube. I like to use an organic stock cube called Kallo, available in health food stores. 
2 tablespoons of chopped coriander.  
1 litre of water.  
Boil the water in a saucepan, crumble in the stock cube and stir until dissolved.

With 10 minutes prep time you’ll have a dish that will pack a punch. 
 
1 tablespoon olive oil.  
1 large onion, chopped.  
1 red pepper, deseeded and chopped.  
2 garlic cloves, crushed.

Salmon fish cakes.

 
The best fishcakes are made at home. Most restaurants are stingy with the fish content or oversalt them. Sometimes you even wonder about the ingredients!

3 potatoes cut into chunks.  
1 400g can of pink salmon in brine.  
3 tablespoons of mayonnaise.  
3 tablespoons of Greek yoghurt.

Mustard stuffed chicken.

This is the easiest, tastiest dish ever. Great for a quick supper, or even a last minute dinner party, you can make it look really special with a nice sauce and garnish.

Chocolate Brownies.

This recipe serves 4. 

150g dark chocolate (min 60% cocoa solids). 
60g butter, cut up into cubes. 
3 eggs. 
200 ml (3/4) cups sugar. 
1/2 cup or 125ml of flour
125 ml (1 cup) mixed roasted nuts. 
Chocolate sauce to serve.

Prawn Noodles with Pak Choi

This is such an easy dish to prepare, and is extremely tasty. It looks great and would make an ideal starter to serve to friends.
