I am glad to say that I am born South African, and proudly from here (Hiervandaan)
How long have you been in your present job?
Just over a year and six months
What is your favourite dish to cook?
My interest lies in more than one specific dish, but if had to choose, it would definitely be Malay dishes which I find really fascinating. Another secret passion is pastry dishes
What is your favourite dish to eat?
You can give me chicken, beef or mutton breyani anytime, anywhere and anyway you want.
What’s the best thing about your job?
From a food point of view, I’m still learning and that goes for us all. Also in my kitchen I can basically do what I want, experiment with anything that appeals to me, and am then able to make the choice of whatever I feel is best. It’s also always such a huge pleasure to be able to be of assistance to others in the workplace – to guide and to lead. What you put in is what you get out.
What’s the worst thing about your job?
Stocktake……oh well that’s part of my job….somebody’s got to do it.
Can you name a restaurant in Cape Town you like?
Aubergine restaurant
If you were not a chef what would you be doing?
A pilot – for sure.
What’s your favourite food memory?
The very first day I walked into a kitchen, when I had absolutely no idea what this job was all about. And when I peeled my very first potato, my very first soup, my very first stew, my passion for food deleveloped right then and there, and grows stronger each day.
