A: I was born in Athlone in Cape Town

Leigh honed his skills in 5 star establishments in The Seychelles.

Q: How long have you been in your present job?

A: I’ve been here for seven months now – since May this year.

Q: What is your favourite dish to cook?

A: Slow Braised pork belly

Q: What is your favourite dish to eat?

A: Confit Duck, caramelized Scallops, celeriac and a bordelaise sauce. I enjoy it with a slightly wooded Chardonnay

Q: What’s the best thing about your job?

 A: Running my kitchen to operate like a smooth sailing Yacht

Q: What’s the worst thing about your job?

A: Tired feet and bad eating habits

Q: Can you name a restaurant in Cape Town you like?

A: La Bruixa,  in Sea Point for their good wine selection, cheese platter and excellent service

Q: If you were not a chef what would you be doing?

A: I would like to be an Organic Pig Farmer. I love pork and the country lifestyle. (Me ,my dog and mother nature)

Q: What’s your favourite food memory?

A: Watching celebrity British chef, Keith Floyd on television when I was 10 years old.  He was cooking snails in Paris.  I remember running into the family garden and collecting a few and then cooking it up for my brother and I.  From then on I knew I wanted to be a chef.

    Hi Monique,

    It’s actually La Bruixa, the spelling gremlins were in the computer. And it’s on 341 Main and Albany, Seapoint.
