Curried apple soup.

This is a delicious, easy to make soup that will have everyone asking for more. 

You’ll need; 

1 Tablespoon unsalted butter. 

1 small onion, finely chopped. 

2 teaspoons freshly grated ginger. 

4 cups of chicken stock. 

1 1/2 tablespoons curry powder. 

2 Granny smith apples, peeled and cored, cut into small pieces. 

1/2 cup of milk. 

Freshly ground pepper. 

Sour cream and chives or parsley for garnish. 

Melt the butter and cook the onion until soft. 

Add the ginger and curry powder and stir in for a minute. 

Add the apples and cook until apples start to go mushy. 

Blend the mixture (in the saucepan if you are handy with a wizzer, or in a blender) 

Stir in the cream and season. 

Serve, and garnish with sour cream and chives.

    sounds yummy, but surely only half a cup of milk/liquid can’t be right !!

    Try a half cup, or more if you like, of double cream.
