Chicken Noodle Soup.

This is a healthy low fat soup that is warming, wholesome and easy to make. I had a bowl of  it at the weekend in the Newport Deli, in Mouille Point, and it really hit the spot. Seeing that the Cape Doctor started blowing today, I thought I’d share my favourite recipe for it.

This is for two people, but you can just double or treble the amounts of you want to make extra to freeze.

It only takes about 10 minutes to prepare and about 30 minutes to cook. So here goes.

1 deboned skinless chicken breast.

900 ml of chicken or vegetable stock.

1 finely chopped garlic clove.

1 Tablespoon of fresh chopped ginger.

50 grammes of noodles.

2 tablespoons of frozen sweetcorn.

4 thinly sliced mushrooms.

2 shredded spring onions.

2 tablespoons of soy sauce.

Mint leaves and a little shredded chilli, to serve.

Method.

Pour the stock into a pan and add the garlic, ginger and chicken. Boil, and then simmer for 20 minutes. Make sure the chicken is tender. Remove the chicken and using

forks, shred it into bite sized pieces.

Return the chicken to the pan and add the noodles, corn, mushrooms, half the spring onions and the soy.

Simmer for a few minutes until the noodles are soft.

Serve into bowls and add the rest of the shredded onion, mint leaves and chilli shreds.

    Nina thank you so much. As usual you have your finger on the pulse. I do love it when recipes are in sync with the weather.
    I was thinking how eating out actually makes you think about recipes you haven’t done for a while. Anyway thank you so much for your kind comments and of course I think your recipe is fab. I’m going to make this coming Saturday.

    Only 10 minutes to prepare if you already have your stock made! Cant be using those horrible cubes and the Woolies fresh stocks are bland and the Melissa’s stocks too expensive.

    Maybe theres a post Clare. Comparing stocks. I make and freeze a different stock most Sundays.

    Hello Rory what a great idea for a story, comparing stocks. Thank you for that. But I have to let you in on my secret. I use the most amazing stock cubes. They are called Kallo. Thay are organic and made in Germany. They cost R40 for a packet and they are so worth it. Available in any good health food store.

    I will have to give them a go. I think I’ve spotted them at Raiths in Gardens centre but always have been cynical about cubes. A few days ago I bought the little Nomu bottles of fonds.
