		<description>It is the variety of potato that is inmportant. You need floury ones (in the UK we have Maris Piper and Rooster, which make excellent roasties, not sure what you have in SA?), but definitely not waxy ones. I also agree that a tablespoon of flour and a vigorous shake after par boliing, gives the best reults.</description>
