Mustard stuffed chicken

This is the easiest, tastiest dish ever. Great for a quick supper, or even a last minute dinner party, you can make it look really special with a nice sauce and garnish.

This recipe serves 4.

4 boneless, skinless chicken breasts.

125g Mozarella cheese, torn into small chunks.

50g of strong cheddar, grated.

1 tablespoon of wholegrain mustard.

8 rashers of smoked streaky bacon.

Heat oven to 200C.

Mix the cheese and mustard together.

Slit the breasts down the side and insert the mustard/cheese mix.

Wrap each breast with 2 rashers.

Place on tray covered in greaseproof sheet and roast for 20-25 minutes. 

For a very nice sauce, mix two tablespoons of creme fraiche and one tablespoon of the wholegrain mustard – stir and heat.
