Cauliflower and blue cheese soup.

Cauliflower and blue cheese soup. Cauliflower and blue cheese soup.

Yum....

This soup is a wow and is so disgustingly easy to make. It’s great for dinner parties because it tastes so delicious. Your guests will be speechless or babbling incoherently in delight.

It tastes like a soup a lot of work has gone into. I think I’ve got a cheek putting it up as a recipe because it is so divine and so easy.

Here goes

Serves four.

1 head of cauliflower medium size

400ml of hot  water.  I use Newlands spring water

4 tablespoons of cream

4 tablespoons of blue cheese

Steam cauliflower until just tender. Please do not turn it into mush.

Liquidise or whizz the cauliflower

Add hot water.

Liquidise

Add blue cheese

Liquidise

Add cream

Stir

Put on heat and simmer very gently for five minutes.

That’s it.

Garnish with sprig of thyme, chives or parsley.

Flipping amazing.

Delicious soup Clare and just perfect for this icy cold snap we are having. And I am thrilled to say that I too am using the Newlands spring water these days :o )
