Spicy lentil and root casserole.

This is my favourite vegetarian casserole and it’s one I love to cook on a day like today – cold, windy, rainy and completely miserable.

You’ll need the following ingredients;

 2 tablespoons of oil ( I use sunflower)

1 chopped onion.

2 crushed garlic cloves.

700g of potatoes, cut up into chunks.

4 Thickly sliced carrots.

2 thickly sliced parsnips.

I medium celeriac, chopped into chunks.

2 tablespoons of curry powder.

1 litre of vegetable stock.

100g of red lentils.A bunch of roughly chopped coriander.

Some plain yoghurt and naan bread to serve.

Method.

Heat the oil and cook the onion and garlic until soft.

Add the potatoes, carrots, parsnips and celeriac and stir in for 7-10 minutes, until golden.

Stir in the curry powder and add the stock bringing to the boil.

Add the lentils and simmer for about 20 minutes until everything is tender and the sauce has reduced and thickened.

Stir in the coriander, cook for a few minutes and let all the flavours infuse.

Serve with yoghurt and naan bread.

    Nice one Clare….healthy too!! Yes it is a fab Spring Day for me, love the Cape of Storms, but then it is because I am in the comfort of my home. Feel so sorry for the homeless!!
