After you pick a mushroom you are not supposed to wash it it under a tap.

If you do, say the fundi’s, or should that be fungi’s, they absorb water,

which leeches into your food as you are cooking.

If you don’t wash them under water they absorb the tastes and sauces instead,

adding a more flavoursome experience to the meal.

What you really should do is brush them lightly to remove dirt particles.

And here is a delightful little device that will help you do this.

It’s a clever little German knife which will slice the best mushrooms out of the ground and then allow you to brush off any dirt at once.
