How long have you been in your present job?

I returned to South Africa after working in London 3 years ago, and went to work for Luke at La Colombe. 8 months ago I was offered the opportunity to become Executive Chef at the River Cafe.

 

What is your favourite dish to cook?Whole leg of lamb in the weber.

 

What is your favourite dish to eat?

Whole leg of lamb from the weber.

 

What’s the best thing about your job?

I love seeing the satisfaction on a guests face when you have cooked an incredible meal for them.

What’s the worst thing about your job?

I don’t have a great amount of time for myself and for socialising as it’s a 24/7 job.

 

Can you name a restaurant in Cape Town you like?

I had a great meal at Carne the other night. It definitely was the tastiest meat I have eaten in South Africa.

 

If you were not a chef what would you be doing?

Playing for Bafana Bafana in the World Cup

 

What’s your favourite food memory?

There are far too many to name, but probably having a crayfish braai with my mates on the beach sipping on cocktails…
