1. Where were you born?
I was born in Palermo, Sicily.
2. How long have you been in your present job?
Since there were no tiles on the floor! about 9 months.
3. What is your favourite dish to cook?
I love to create, putting together whatever I find. At work, definitely chocolate in any form.
4. What is you favorite dish to eat?
My Mother’s “Analletti al Forno”, a pasta from Palermo. No one makes it better than her.
5. What’s the best thing about your job?
The creativity and endless combinations. I love to see the indulgent look on peoples faces after eating one of my pastry creations.
6. What’s the worst thing about your job?
I can’t stop thinking about it. I have a little notebook beside my bed in case I think of a new recipe. I live, breathe and think about pastry.
7. Can you name a restaurant in Cape Town you like?
So far I haven’t had a chance to experience a lot, but I have promised myself a trip to Myoga for a full menu tasting.
8. If you were not a chef what would you be doing?
If I had money I’d have tried to become a motocross rider.
9. What is your favourite food memory?
A 4 hour 12 course tasting menu at the “Seahorse” in Bermuda. I was trying to impress a girlfriend that moving to Australia with me wasn’t such a crazy idea!
